Protein Forward Chocolate Walnut Brownies

Protein Forward Chocolate Walnut Brownies

Ingredients

  • 1 tbsp flaxseed meal + 2 tbsp water
  • ½ cup almond milk
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • 200 g paneer, crumbled
  • 75 g almond flour (¾ cup)
  • 40 g cocoa powder (½ cup)
  • ½ cup sugar-free baking ‘sugar
  • 2 tsp instant coffee powder
  • ½ tsp salt
  • 1 tsp baking powder
  • 2 tbsp chopped walnuts
  • 60 g sugar-free chocolate chips (½ cup), for topping

Method

  1. Preheat oven to 180°C.
  2. Grease and line an 8×8 inch square tin with parchment paper.
  3. Mix flaxseed meal with water and let it sit for 2–3 minutes to make a flax gel.
  4. Add all ingredients except walnuts and chocolate chips to a blender: almond milk, melted butter, vanilla extract, crumbled paneer, almond flour, cocoa powder, sugar-free sweetener, coffee powder, salt, baking powder and flax gel.
  5. Blend once, briefly, just until combined. Do not over-blend.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared tin.
  8. Sprinkle the chocolate chips evenly on top.
  9. Bake at 180°C for 30–35 minutes.
  10. Cool completely before slicing.
