Protein Forward Chocolate Walnut Brownies
Protein-forward, eggless chocolate brownies made for indulgence without compromise. Ingredients
- 1 tbsp flaxseed meal + 2 tbsp water
- ½ cup almond milk
- 1 tbsp melted butter
- 1 tsp vanilla extract
- 200 g paneer, crumbled
- 75 g almond flour (¾ cup)
- 40 g cocoa powder (½ cup)
- ½ cup sugar-free baking ‘sugar
- 2 tsp instant coffee powder
- ½ tsp salt
- 1 tsp baking powder
- 2 tbsp chopped walnuts
- 60 g sugar-free chocolate chips (½ cup), for topping
Method
- Preheat oven to 180°C.
- Grease and line an 8×8 inch square tin with parchment paper.
- Mix flaxseed meal with water and let it sit for 2–3 minutes to make a flax gel.
- Add all ingredients except walnuts and chocolate chips to a blender: almond milk, melted butter, vanilla extract, crumbled paneer, almond flour, cocoa powder, sugar-free sweetener, coffee powder, salt, baking powder and flax gel.
- Blend once, briefly, just until combined. Do not over-blend.
- Fold in the chopped walnuts.
- Pour the batter into the prepared tin.
- Sprinkle the chocolate chips evenly on top.
- Bake at 180°C for 30–35 minutes.
- Cool completely before slicing.
