Ingredients:

1 cup rolled oats
2 cups water
1 ripe banana, mashed
1/2 cup Icelandic Skyr (Greek yogurt can be used as a substitute)
1 tablespoon maple syrup
1/4 teaspoon vanilla extract
Pinch of salt
Toppings (optional):
Sliced bananas
Chopped nuts (e.g., walnuts, almonds, or pecans)
Drizzle of honey or additional maple syrup
Dash of cinnamon
Instructions:

In a medium-sized saucepan, bring the water to a boil. Add the rolled oats and reduce the heat to medium-low. Cook for about 5-7 minutes, stirring occasionally, until the oats are soft and have absorbed most of the water.
In a small bowl, mash the ripe banana until creamy and smooth.
Once the oats are cooked, stir in the mashed banana, Skyr (or Greek yogurt), maple syrup, vanilla extract, and a pinch of salt. Mix well to combine all the ingredients.
Cook the mixture for an additional 2-3 minutes, stirring continuously, until everything is well heated through and combined.
Remove the saucepan from heat, and divide the Skyrrup Oatmeal into bowls.
