Preparation time: 10 minutes Cooking time: 10 minutes Total time: 20 minutes Serving size: 2

1 cup rolled oats
2 cups water
1 ripe banana, mashed
1/2 cup Icelandic Skyr (Greek yogurt can be used as a substitute)
1 tablespoon maple syrup
1/4 teaspoon vanilla extract
Pinch of salt
Toppings (optional):
Sliced bananas
Chopped nuts (e.g., walnuts, almonds, or pecans)
Drizzle of honey or additional maple syrup
Dash of cinnamon

In a medium-sized saucepan, bring the water to a boil. Add the rolled oats and reduce the heat to medium-low. Cook for about 5-7 minutes, stirring occasionally, until the oats are soft and have absorbed most of the water.
In a small bowl, mash the ripe banana until creamy and smooth.
Once the oats are cooked, stir in the mashed banana, Skyr (or Greek yogurt), maple syrup, vanilla extract, and a pinch of salt. Mix well to combine all the ingredients.
Cook the mixture for an additional 2-3 minutes, stirring continuously, until everything is well heated through and combined.
Remove the saucepan from heat, and divide the Skyrrup Oatmeal into bowls.
Optional: Top the oatmeal with sliced bananas, chopped nuts, a drizzle of honey or maple syrup, and a dash of cinnamon for added texture and flavor.
Serve hot and enjoy this delicious and nutritious Skyrrup Oatmeal & Banana for a satisfying breakfast or a wholesome snack.
Note: You can adjust the sweetness level to your preference by adding more or less maple syrup. Additionally, feel free to customize the toppings according to your taste buds or dietary needs.)
